Scope
Scope: This document specifies the pre-slaughter requirements, slaughtering procedures and requirements, cooling, lamb carcass division, freezing, packaging, labeling, storage, and other requirements for the slaughter of Albas wool goats. This standard applies to the management of slaughter operations in Albas wool goat slaughterhouses (plants); Main technical content: 3. Goat carcass: The body of a goat after slaughter and bloodletting. Ovine ketone body: The body of a goat after slaughter and bloodletting, with or without skin removal (hair removal), head, hooves, and internal organs removed. White viscera: The stomach, intestines, and spleen of a goat. Red viscera: The heart, liver, and lungs of a goat. Synchronous inspection: A method of inspection corresponding to slaughter operations, in which the heads, hooves, and viscera of livestock are inspected and evaluated comprehensively by inspectors in synchronization with the production line of carcasses. 3.6 Mongolian method of killing goats: A method of killing goats by making a small incision (about 10 cm in length) in the chest of a goat (large enough for an adult's hand to fit through), cutting through the skin and flesh with a sharp knife, inserting a hand into the goat's chest cavity, locating the arteries on the back, and quickly severing them to make the goat die peacefully. 4. Pre-slaughter requirements: Slaughtered goats should be healthy and accompanied by an Animal Health Supervision Certificate issued by the local animal health supervision authority. Slaughtered goats should be fasted for at least 12 hours and provided with sufficient water. Water should be stopped 3 hours before slaughter.
