Basic Information
Scope
Main Technical Content: 4. Preliminary Processing 4.1 The raw materials shall comply with the requirements of T/CQGFA 01-2024. On the same day, the harvested water spinach is placed in a temporary storage tank. 4.2 Open the quantitative discharge port of the temporary storage tank and add a suitable amount of water spinach to the quantitative tank for weighing. 4.3 Blanching: Add a suitable amount of tap water to the blanching tank, which should meet the requirements of GB 5749. Heat the water to 90–100°C, and blanch the water spinach in the quantitative tank for 6–10 minutes until the tail stems turn white and the color turns light green. 4.4 Rinsing: Drain the blanched water spinach and place it in a rinsing tank containing 3/4 tap water. Rinse it for 16–18 hours until the color turns yellow-green. 4.5 Filtration: Remove the water spinach from the rinsing tank, filter it to remove moss, small leaves, and snails, and transfer it to a grading table. 4.6 Grading 4.6.1 Basic requirements: a) Fresh, free from rot or spoilage; leaves curled, with generally uniform shape; b) With the normal light green or yellow-green color and gelatinous texture of water spinach, without obvious disease spots or mold; c) Clean, free from impurities, and without odor. 4.6.2 Grading is divided into three levels: Extra, First, and Second. The grading criteria are shown in Table 1. Table 1 Grading Criteria for Water Spinach Grade Extra First Second Leaf bud rate, % ≥96 60≤r<96 <60 Black node rate, % ≤11 <55 <10 Note 1: Extra grade allows 5% of products that do not meet the requirements of this grade, but they should meet the requirements of First grade; Note 2: First grade allows 8% of products that do not meet the requirements of this grade, but they should meet the requirements of Second grade; Note 3: Second grade allows 10% of products that do not meet the requirements of this grade, but they should meet the basic requirements. 4
