Scope

Scope: This document specifies the terms and definitions for microbiological control in poultry slaughterhouses, the layout and equipment requirements of slaughterhouses, environmental requirements for slaughterhouses, quarantine inspections, slaughtering procedures and requirements, packaging and labeling, storage and transportation, and hygiene requirements for chilled poultry products. It also covers personnel management, recordkeeping, and document management. This document applies to the control of microbiological contamination in the factory-scale slaughtering of chickens and ducks. Other poultry species, such as geese, can refer to this document for implementation. Main Technical Content: 4.1 The layout and equipment of slaughterhouses shall comply with GB 12694 and GB/T 17237. 4.2 When designing or selecting ventilation hood systems and equipment for production and storage areas, measures shall be taken to prevent contaminants from dripping. 5. Environmental Requirements for Slaughterhouses 5.1 Internal Environment of Slaughterhouses 5.1.1 Slaughterhouses shall have good ventilation and exhaust systems. 5.1.2 Personnel entering and exiting the slaughterhouse shall disinfect in the disinfection pool at the entrance, and closed areas such as changing rooms shall use UV disinfection. 5.1.3 Slaughterhouses shall be kept clean, with no standing water, dirt, or blood stains accumulated. 5.1.4 Before and after each shift, slaughtering tools and equipment, and the floors, walls, and drains of the slaughtering workshop shall be cleaned. 5.1.5 After disinfection of equipment, tools, and worktables, they shall be rinsed clean before use.
