Scope

Scope: This document specifies the good operational practices for the slaughter and processing of Albarz sheep, including site selection and factory environment, buildings and workshops, facilities and equipment, production raw materials, hygiene control during slaughter and processing, inspection and quarantine, personnel requirements, hygiene management, labeling, packaging, storage and transportation, product traceability and recall, and record-keeping and management system requirements. This document applies to the production management of Albarz sheep slaughter and processing. Main technical content: 3. Terms and definitions. The terms and definitions defined in GB 12694, GB/T 19480, GB 51225, NY/T 3224, and NY/T 3469 apply to this document. 4. General requirements for site selection and factory environment. The site selection and factory environment shall comply with the provisions of GB 12694. The site of the slaughterhouse should be located far away from residential areas, at least 500 meters upwind of the main wind direction in summer, and in an area with high elevation, dry environment, convenient transportation, and sufficient water sources. It should not be located near the upstream of urban water sources and water intake and discharge points. The area around the factory should be free from dust, smoke, harmful gases, radioactive substances, and other polluting sources. A fence and a protective strip of at least 15 meters should be set up between the buildings of the production area and the roads outside the factory. The roads in the factory area should be paved with concrete, asphalt, or other easy-to-clean hard materials, and maintained with smooth surfaces, no damage, no standing water, and no dust. The open areas in the factory area should be paved with cement, tiles, or grass.
