The rapid methylation method is suitable for microencapsulated fat powders with a free fatty acid content of no more than 2%, and can be used for preliminary experimental determination of the fatty acid profiles of all sub-samples of fat powders. The conventional methylation method is suitable for all sub-samples of fat powders.
