Abstract
This standard specifies a high-performance liquid chromatography method for the determination of acrylamide in food simulants.
This standard is applicable to the determination of the migration of acrylamide in water-based food simulants such as water, 3% (mass concentration) acetic acid solution, and 10% (volume fraction) ethanol solution, as well as in olive oil.
The lower limit for the determination of acrylamide in water-based food simulants is 0.01 mg/L, and the lower limit for the determination of acrylamide in olive oil is 0.01 mg/kg.
