This document is applicable to the production of cloud and oil drum cakes. Main technical content: Sensory characteristics. The sensory characteristics shall comply with the requirements specified in Table 3. Table 3 - Sensory characteristics requirements. Appearance: Golden in color, without burnt or raw phenomena. Taste: Fragrant, salty, and fresh. Texture: Crispy on the outside and tender on the inside. Physicochemical indicators: The physicochemical indicators shall comply with the requirements specified in Table 4. Table 4 - Physicochemical indicators.
