Basic Information
Scope
This standard specifies a method for indirectly determining the solid fat content in animal and vegetable oils (hereinafter referred to as oils) using low-resolution pulsed nuclear magnetic resonance.
The two heat pretreatment methods specified in this standard are suitable for oils with no significant homomorphic polymorphism and a tendency to form β′ crystals, and for oils similar to cocoa butter with significant homomorphic polymorphism and a tendency to form β crystals. Appendix C is applicable to other heat pretreatment methods for special purposes.
The indirect method specified in this standard is more complicated and less reproducible than the direct method, but it is more accurate and more suitable for all fats.
Note: ISO 8292-1 specifies the direct method.
