Scope
This standard applies to the food additive citric acid fatty acid glycerides, which are obtained by esterifying glycerol with citric acid and edible fatty acids, or by reacting a mixture of mono- and diglycerides of edible fatty acids with citric acid. It consists of a mixture of citric acid and edible fatty acids with glycerol, and may contain a small amount of free fatty acids, free glycerol, free citric acid, and mono- and diglycerides. It may be fully or partially neutralized with sodium hydroxide or potassium hydroxide.
