Scope

Scope: This document specifies the terms and definitions, basic requirements, process requirements, technical requirements, test methods, inspection rules, and consumption methods for Jingning Glutinous Rice Mochi (Glutinous Rice Bun). This document is applicable to the production of Jingning Glutinous Rice Mochi. Main technical content: Process flow: Soaking, steaming, pounding, and flour coating (see Appendix A). Processing requirements: 5.2.1 Soaking: Wash 5kg of glutinous rice and soak it in cold water for 7–9 hours, then drain it. 5.2.2 Steaming: Place the glutinous rice in a rice steamer. First, steam it over high heat until large steam appears on the steamer, then switch to low heat and steam for about 1 hour until it is fully cooked. 5.2.3 Pounding: Pour the steamed glutinous rice into a stone mortar and pound it with a stone hammer or wooden hammer to make a smooth and fine Mochi, or process it with a rice flour milling machine. 5.2.4 Flour coating: Mix 0.35kg of brown sugar and white sugar, and 0.9–1.0kg of soybean flour and sesame seed flour together (the proportion can be adjusted according to taste) to make flour coating. Pour the flour coating into a stainless steel basin, then dip the Mochi into the flour coating. After coating evenly, press it into a thin sheet and cut it into small pieces (or small round cakes) about 3cm × 4cm in size, which can then be served on a plate for consumption.
