This method describes an efficient liquid chromatography method for determining the lectin content in edible fungi.
This document is suitable for determining the lectin content in Agaricus bisporus, Pleurotus eryngii, Volvariella volvacea, Lentinula edodes, and Pleurotus eryngii, with other types of edible fungi serving as reference.
The method's detection limit for fresh products is 6.2 mg/kg, and for dried products it is 9.2 mg/kg; the quantification limit for fresh products is 12.4 mg/kg, and for dried products it is 18.4 mg/kg.
