Scope

Scope: This document specifies the terms and definitions, basic requirements, process requirements, technical requirements, test methods, inspection rules, marking, packaging, transportation, and storage of Jin Yun Shuang Mian. This document is applicable to the production of Jin Yun Shuang Mian. Main technical contents: Sensory characteristics. The sensory characteristics shall comply with the requirements in Table 3. Table 3: Requirements for Sensory Characteristics. The noodles should have a compact texture, uniform texture, no impurities, uniform color, and a light brown fine filament type, with uniform length and thickness, and a diameter of 1cm-2cm. Taste: A rich wheat fragrance, slightly salty noodles, a soft and smooth texture, no cloudy soup, a pleasant aroma, and easy digestion. Physical and chemical indicators: The physical and chemical indicators shall comply with the requirements in Table 4. Table 4: Physical and Chemical Indicators. The natural breakage rate shall be ≤5%, the cooked breakage rate shall be ≤5%, the cooking loss rate shall be ≤15%, the moisture content shall be ≤13%, the sodium chloride (as NaCl) shall be ≤5%, and the food additives shall comply with the requirements of GB 2760.
