Scope
Scope: This standard specifies the terms and definitions, production process, product indicators, and labeling of Chinese black pork, as well as the requirements for traceability. This standard applies to the production of Chinese black pork and the supervision and evaluation of Chinese black pork by internal and external parties (including third-party institutions) in the market and organizations. Main technical contents: 1. The breeding of pigs should comply with the requirements of standards such as GB/T 17824.2 and NY/T 820. The breeding pigs used in the production of commercial pork should have clear pedigrees and reliable sources. 2. The breeding should be conducted in accordance with the standardized feeding requirements of GB/T 17824.2, and a traceable breeding technology system should be established. According to the characteristics of local Chinese pig breeds, suitable feed should be selected. The feed should reduce the addition of ingredients that may harm the quality of pork, comply with hygiene standards, and contain an appropriate proportion of green feed and fermented feed. The epidemic prevention and control management should comply with the requirements of GB/T 17823. 3. The slaughter and processing should comply with the relevant provisions of GB 12694.
