Scope
Scope: This document specifies the site selection and general layout, architecture, structure, slaughtering and dismembering processes, veterinary health inspections, refrigeration processes, water supply and drainage, heating and ventilation, and air conditioning requirements for the design of slaughtering and dismembering workshops for Alashan cashmere goats. This document applies to the design of new, expanded, and renovated slaughtering and processing workshops for Alashan cashmere goats; Main technical content: 3 Terms and definitions. The following terms and definitions apply to this document. Ovine carcass: The body of a sheep after slaughter, with or without skin removal (hair removal), head, hooves, and internal organs removed. Offals: The heart, liver, spleen, lungs, kidneys, stomach, and intestines of a sheep. By-products: The internal organs, as well as the head, hooves, and skin of a sheep. Synchronous inspection: An inspection method that synchronizes the head, hooves, and internal organs of a sheep with the carcass production line, allowing inspectors to conduct checks and make comprehensive judgments based on the results. Chilling: The process of reducing the central temperature of a sheep carcass through air cooling or other cooling methods. Pre-slaughtering room: A necessary building or facility located before the slaughtering process, including live sheep holding pens, emergency slaughtering rooms, unloading platforms for sheep, etc. Slaughtering room: A location where sheep are stunned, hung, and cooled before the carcass, including stunning rooms (areas), bleeding rooms (areas), skinning rooms (areas), internal organ sorting rooms, head and hooves sorting rooms, skin sorting rooms, tool cleaning and disinfection rooms, and auxiliary equipment rooms. Cutting and deboning room: A location where carcasses are cooled and processed into products, including carcass cooling rooms, cutting rooms, packaging rooms, freezing rooms, packagin
