Abstract
This standard specifies the basic requirements and management guidelines for the premises, facilities, and personnel involved in the procurement of raw materials, processing, packaging, storage, transportation, and sales in the production of pastries and bread.
This standard applies to the production and sale of pastries and bread in factories, as well as in pastry shops (bakeries). The production and sale of cookies in pastry shops (bakeries) can be implemented with reference to this standard.
