Scope

This document describes the method for determining the saponification value of animal and vegetable fats. The saponification value is an indicator for measuring the content of free fatty acids and glycerides in oils or fatty acids.
This document is applicable to refined animal and vegetable fats and animal and vegetable crude oils.
This document is not applicable to products containing inorganic acids, unless the inorganic acids can be measured separately.
The saponification value can also be calculated from the fatty acid data obtained by gas chromatography analysis as shown in Appendix B. For this calculation, it is necessary to ensure that the sample does not contain impurities or thermal degradation products.
