Scope

This document describes the methods for determining the amylose content in rice, both with and without fat removal.
Both the fat removal method and the non-fat removal method in this document are suitable for rice with an amylose content higher than 5% (by mass fraction). The amylose content of corn, millet, and other cereals is determined by referring to the fat removal method.
This document is not applicable to cooked rice.
