Scope

This standard specifies the method for determining the oxidation stability of fats induced by extreme conditions of high temperature and high air flow. This standard applies to unrefined and refined animal and vegetable fats. This standard does not apply to the determination of the stability of fats at room temperature, but it can be used to compare the antioxidant efficiency of antioxidants added to fats.
