Scope

This document describes the method of determining the falling number of grains using the Hagberg-Perten method to measure the α-amylase activity in grains.
This document is suitable for determining the falling number of wheat, rye, and their flours, as well as durum wheat and its coarse flour. The determination of the falling number of other grains and their flours can be referenced for use.
This document is not suitable for determining the falling number of grains with low α-amylase activity or in areas with an altitude exceeding 3,048 meters.
