Scope

This standard specifies the method for determining the activity of α-amylase in grains using the falling number method. This standard is applicable to grains, particularly wheat, rye, and their flours, as well as durum wheat and its coarse flour. The standard specifies the particle size of whole durum wheat coarse flour and whole wheat flour. This standard is not applicable to the determination of low α-amylase activity. For such cases, reference can be made to ISO 7973. By converting the falling number into a liquefaction number (LN), it is possible to extrapolate the composition of the mixture of grains, flours, or coarse flours required for the production of products with specific requirements for the falling number.
