本标准适用于以乳糖为原料,经芽孢杆菌ATCC 31382(Bacillus sp.)或米曲霉(Aspergillus oryzae)生产的β半乳糖苷酶催化水解半乳糖苷键,将乳糖水解成为半乳糖和葡萄糖,同时通过转移半乳糖苷的作用,将水解下来的半乳糖苷转移到乳糖分子,生成的食品营养强化剂低聚半乳糖。
