Scope

This standard applies to β-galactosidase, which is produced from lactose as a raw material by Bacillus sp. ATCC 31382 or Aspergillus oryzae. The enzyme catalyzes the hydrolysis of galactosidic bonds, breaking down lactose into galactose and glucose. At the same time, through the transfer of galactosidic groups, the hydrolyzed galactosidic groups are transferred to lactose molecules, producing a food nutrition enhancer called oligofructose.
