Scope

This document specifies the technical requirements and inspection rules for dough roller mills (referred to as roller mills), defines relevant terms and definitions, describes the structure of roller mills, measures verification, and related hazards in different areas, and provides usage information. This document is applicable to roller mills used in food stores (candy stores, bakeries, dessert shops, delicatessens, restaurants, etc.). Roller mills in food factories should refer to this document. This document is not applicable to: -- roller mills in the experimental stage that are being developed by manufacturers; -- roller presses that deliver dough to rollers by gravity (such as pizza dough roller mills); -- household roller mills.
