Scope

This part of GB/T 5506 specifies the method for determining the content of wet gluten in wheat and wheat flour (including common wheat and durum wheat) by instrumentation. This part can be directly used for gluten testing of wheat flour, and it can also be used for gluten testing of durum wheat grain flour or ordinary wheat whole wheat flour (with a grain size meeting the requirements specified in Table B.1 of Appendix B).
