Scope

This part of GB/T 5506 specifies the method for determining the moisture gluten content in wheat (including common wheat and durum wheat) and wheat flour by hand washing. This part can be directly used for gluten determination in wheat flour, and can also be used for gluten determination in durum wheat grain flour or ordinary wheat whole wheat flour (with a grain coarseness meeting the requirements specified in Table A.1 of the appendix).
