Scope
This document specifies the basic requirements for the quality grading of beef carcasses and cut meats, the division of quality grades, marking, packaging, and recording requirements, and describes the evaluation methods of technical indicators and quality grades for beef carcasses and cut meats. This document is applicable to the quality grading of beef from cattle (except yaks, buffaloes, and calves).
