Scope
This standard specifies the terms and definitions for the production of fresh and frozen meat, the requirements for animal husbandry used in the production of fresh and frozen meat, the transportation requirements for slaughtered animals, the requirements for slaughtered animals, the requirements for facilities and equipment in slaughterhouses and meat enterprises, hygiene requirements, process control, and inspection and quarantine requirements, etc. This standard applies to fresh and frozen pork, beef, and lamb products intended for human consumption, including fresh and frozen pork, beef, and lamb products sold directly or after further processing for consumption, but excluding poultry, fish, and wild animals as stipulated in other regulations.
