Scope
This standard specifies the terms and definitions, general requirements, and document requirements for natural casing processing enterprises to establish and implement the HACCP system, as well as requirements for good manufacturing practices (GMP), sanitary standard operating procedures (SSOP), standard operating procedures (SOP), and the establishment procedures of the HACCP system. It also proposes a HACCP plan template for natural casing processing enterprises. This standard applies to the establishment and implementation of the HACCP system, and related evaluation activities in natural casing processing enterprises.
