Scope

This standard applies to yeast beta-glucan, a food nutritional fortifier mainly composed of beta-1,3/beta-1,6-glucan extracted from Saccharomyces cerevisiae through cell wall disruption, acid and alkali treatment, separation and purification, and drying processes. Note: The species name of Saccharomyces cerevisiae is translated as "brewer's yeast", and the term "bread yeast" defined in the Ministry of Health's Announcement No. 6 of 2012 as "using bread yeast (Saccharomyces cerevisiae) as a raw material" refers to the common English name of this yeast.
